West of Ireland Rashers are produced from an Irish Pigs (Landrace) reared in Canada specifically for this product. You will not find this pork in the local market. The pork is then brought to our own manufacturing facility in the Hudson Valley Region of New York, slow cured using imported curing agents from Ireland, sliced and packed.
